The greatest challenge for me when going vegan was knowing how to cook a meal without a recipe (I write more about learning to cook without recipes here). I’m always on the look out for meal ideas that don’t involve complicated recipes, because I think that’s what’s going to help more people (including myself) eat healthily and without animal products. My sister told me about this great meal that she’s been eating lately.
Vegan Burger Bowl:
You’ll need:
- One vegan burger
- A handful of greens (your choice as to the kind)
- Avocado
- Rice
- Oil for cooking
To make the bowl, simply cook the burger in coconut oil, and also sauté the greens in coconut oil for a few minutes, until they’re slightly wilted. You could use another kind of oil, or if you prefer so use salad greens or spinach as opposed to cooking greens, you wouldn’t need to sauté them. While the burger is cooking, you could slice the avocado and reheat the rice (leftover rice is perfect for this). Then, just assemble the ingredients in a bowl.
What I love about this recipe is how versatile it is. You could add a sauce or salsa for more flavor, or top the bowl with fresh herbs or green onions. If you had other vegetables you wanted to use up, you could throw them in the mix. For extra protein and nutrients, you can top the bowl with nuts and/or seeds, or even mix chia seeds into the rice.
